Every dish at Woodcut starts with fresh, seasonal raw ingredients. Chef Sunny Lusted then asks what cooking method will let the ingredient shine and evoke a place and time.
The result? A diverse and mouth watering menu that’s split into cooking methods, from ash and wood grilling, to wood ovening, steam kettling and curing. Highlights include a whole wood-fired southern rock lobster served with kombu butter, a home fermented sourdough with delightfully funky cultured butter and octopus cooked on the ash grill with whipped anchovies.
